Making this menu work for you
If you do not like cooking, or don't have the time, try these menu changes:
- You can find cheese blintzes in your grocer freezer section.
- Purchase muffins from your local bakery and keep them in the freezer until ready to eat. Pay attention to serving size, many bakery muffins are two or more servings each.
- Several companies make mixes for cornbread, you can find them in the baking section of your grocery store. Cornbread can be made ahead and stored in an airtight container for 2 or 3 days.
- Substitute a can of chicken and rice soup for the chicken corn chili. Be sure to read the labels to make sure the soup you get doesn't contain excess fat and salt.
- Cooking Peking Fish may take advanced cooking skills. An alternative would be to grill a fish fillet or steak.
- Instead of making the cake for strawberry shortcake, purchase an Angel Food Cake at the supermarket. Give half the cake to a friend so you will not be tempted to over-eat (resulting in heartburn and indigestion.)
