Apple-Stuffed Pork Chops

Ingredients

2 cup diced, peeled Granny Smith apples
2/3 cup chopped pitted dried plums
1/4 cup chopped pistachios
2 tsp dried thyme
2 tsp brown sugar
8 6-oz lean, bone in pork chops
1 tsp salt
1/2 tsp black pepper
cooking spray
3 Tbs flour
14 oz fat-free chicken broth

Procedure

  1. Stir together apples, dried plums, pistachios, thyme and brown sugar.
  2. Cut a horizontal slit through the thickest portion of each pork chop to form a pocket. Stuff about 1/4 C apple mixture into each pocket. Sprinkle pork evenly with 1/2 t salt and pepper.
  3. Cook half the pork chops, 7 minutes per side in a large non-stick skillet sprayed with cooking spray, over medium-high heat. Remove from pan and cook other half of the chops.
  4. Combine 1/2 t salt and the flour in a medium bowl, stirring with a whisk. Gradually add broth, stirring with the whisk. Add to pan, scraping pan to loosen browned bits. Simmer over low heat; cook 5 minutes or until thick, stirring constantly. Serve sauce with pork.
