Black Bean Dip

Ingredients

4 cup very tender cooked black beans
1/3 cup nonfat plain yogurt
1/4 cup coarsely chopped fresh chives
1/8 tsp dried oregano
1/8 tsp thyme
1/4 tsp dried tarragon
salt
freshly ground black pepper

Procedure

  1. Combine the beans, yogurt, chives, oregano, thyme and tarragon in a food processor and process until a thick, smooth paste forms. Taste, adding more dried herbs if necessary for the mixture to have a mild herbed flavor and season with salt and pepper.
  2. Serve at room temperature.

Serves 16. Per Serving: Calories 60; Calories from fat 3(5%); Fat 0.3g; Carbohydrates 11g; Sugar 0g; Fiber 4g; Protein 4g
