Chicken Florentine

Ingredients

10 oz chopped frozen spinach, cooked and drained
2 Tbs margarine
3 Tbs flour
1 tsp accent
1 tsp salt
1/4 tsp cayenne or black pepper
2 cup milk
1/2 cup parmesan cheese
2 cup cooked chicken in chunks (3 half breasts, boneless)
1-1 1/2 cup soft bread crumbs
1 - 2 T butter

Procedure

  1. Place the spinach in the bottom of a 1 1/2 qt buttered casserole.
  2. Melt the margarine in a saucepan and stir in the flour. Let bubble one minute, stirring constantly. Add spices and milk. Stir constantly until mixture thickens; add cheese and chicken.
  3. Pour chicken mixture over spinach. Top with bread crumbs and dot with butter. Bake at 350 degrees for 20 minutes or until casserole is heated completely. If bread crumbs need additional browning, place under the broiler for a minute or two.

Serves 6. Per Serving: Calories 246; Calories from fat 96(39%); Fat 11g; Carbohydrates 14g; Sugar 5g; Fiber 1g; Protein 23g
