Chicken Normandy

Ingredients

2 chicken breast halves
2 Tbs flour
1/4 cup oil
1 onion, chopped
2 stalks celery, sliced
2 apples, chopped
2 cup apple juice

Procedure

  1. Rinse chicken and pat dry. Cut each breast into two pieces; dust with some flour. Brown chicken in oil in skillet; remove chicken. Add onion, celery and apple to drippings in skillet. Saute until tender. Sprinkle with remaining flour; mix well. Cook for 5 minutes, stirring frequently.
  2. Add apple juice, bring to a boil; add chicken. Simmer covered for 45 minutes; remove chicken to platter. Spoon sauce over top.

Serves 4. Per Serving: Calories 310; Calories from fat 128(42%); Fat 15g; Carbohydrates 31g; Sugar 22g; Fiber 3g; Protein 14g
