Rhubarb Pancakes

Ingredients

3/4 cup finely diced rhubarb
1/2 cup applesauce
1 tsp ground cinnamon
1/2 tsp ground ginger
2 cups pancake batter

Procedure

  1. To two cups of your favorite pancake batter, fold in the other ingredients.
  2. Cook batter on a hot skillet and serve with yogurt, maple syrup or your favorite fresh fruit, jam or jelly.

Serves 4. Per Serving: Calories 241; Calories from fat 27(11%); Fat 3g; Carbohydrates 47g; Sugar 3g; Fiber 3g; Protein 6g
