Sweet Potato Soup

Ingredients

1 large cooked sweet potato
1 1/2 cup strong chicken stock
3/4 cup milk
Salt and pepper to taste

Procedure

  1. In a food processor, combine the sweet potato, stock and milk. Process until smooth, pulsing frequently. Season with salt and pepper.
  2. Pour into saucepan and cook over medium heat, stirring occasionally until very hot.
  3. Ladle into soup bowls and serve.

Serves 2. Per Serving: Calories 152; Calories from fat 21(14%); Fat 2g; Carbohydrates 24g; Sugar 10g; Fiber 2g; Protein 9g
