Strawberry Shortcake

Ingredients

1 cup flour plus 2 T
1 cup white sugar
1/2 tsp salt
1/2 cup boiling water
4 egg whites
1/2 Tbs baking powder
1/2 tsp cream of tartar
1/2 tsp vanilla extract
1/2 tsp almond extract
1 lb strawberries

Procedure

  1. Preheat over to 350 degrees F (175 degrees C).
  2. Sift flour, sugar and salt, then stir in the boiling water. Let cool.
  3. Beat egg whites, cream of tartar, baking powder, vanilla and almond flavorings until stiff peaks form. Fold into the flour mixture and pour batter into one ungreased 9x13 pan.
  4. Bake for 35 minutes. Cool cake inverted in pan, laying a tea towel underneath the cake to absorb the steam.
  5. Wash strawberries and remove hulls. Slice and serve with cake.
